Taco Salad

This is the perfect salad for using up leftovers!  And it’s easily adjusted to your tastes.  If you like your salad meatier, by all means, add more hamburger meat.  If you like more cheese or dressing or any of the other ingredients, then add them!!

Taco Salad

  • 1 bag of mixed salad greens
  • 1 can of kidney beans, drained and rinsed
  • 1/3 c cooked taco seasoned hamburger meat
  • 2/3 c shredded colby cheese
  • 2/3 c Cowboy Caviar (I didn’t get enough of this stuff when I made it a couple of weeks ago, so I made it up again today)
  • 1/3 c Catalina salad dressing
  • coarsely broken up tortilla chips or corn chips

Dump all ingredients into a large bowl and mix well, making sure the dressing covers all the salad.  Top with crushed chips.

Feta Pasta Salad

Here’s the other side dish I took to my sister’s.  It was very yummy, too!

Feta Pasta Salad

  • cooked pasta
  • 1 bottle of Kraft Tuscan House Italian dressing (not Zesty Italian)
  • 4 oz container crumbled feta cheese
  • 1 large tomato, chopped
  • 5 green onions, chopped
  • 2.25 oz can sliced black olives

Make sure pasta is rinsed in cool water.  Place in large bowl and add the rest of the ingredients.  Stir well and refrigerate until ready to serve.  This is another one of those that gets better the longer it marinates. 😀

Fruit Salad is really one of the easiest things to throw together for dessert.  And the possibilities are endless!!  Take advantage of the fresh fruit that is in season as well as the canned varieties.

Fruit Salad

  • 1 can of no-sugar added fruit cocktail
  • 1 can diced or sliced peaches, light syrup
  • 4 apples, chopped
  • 2 pkg blackberries
  • 2 large handfuls of grapes
  • any other fruit you like (bananas, blueberries, strawberries, kiwi, etc)  (if I had all of these fruits, I would have added them!)

Dump the fruit cocktail and peaches, juice and all in a large bowl.  The juice helps the other fruit to not brown.  Wash and chop the rest of your fruit (what needs to be chopped, at least).  Stir and serve.  For a little extra special treat…dollop a bit of whipped cream on top!

The weather is finally acting more like Spring/Summer, and I’m getting into the mood for salads.  And this one is yummy!

Yummy Chicken Salad

  • 4 cooked and shredded chicken breasts
  • 1 1/4 c sour cream
  • 1 Tbsp sugar
  • dash of onion salt
  • dash of pepper
  • chopped red grapes
  • chopped pecans

Place sour cream, sugar, onion salt, and pepper in medium bowl.  Add shredded chicken and stir well.  Add desired amount of grapes and pecans.  Stir again.  Serve on favorite bread….this is especially yummy on these!

This is one of my favorite salads.  This is also the salad that inspired the Ranch Vinaigrette that is always in my fridge :0)

Colorful Veggie Salad

  • 6 c fresh broccoli florets
  • 6 c fresh cauliflower, chopped
  • 2 c cherry tomatoes, halved (though I used romas this time)
  • 1 large red onion, sliced

Dressing:

  • 1 pkg dry ranch dressing mix
  • 2/3 c oil
  • 1/2 c vinegar

Mix all veggies in a large bowl.  Prepare dressing and pour over veggies.  Refrigerate for at least 3 hours.

Yummy, Yummy, Yummy

But this, my precious 1st born…thinks this salad is vile and gross (because it’s all things veggie), but what does he know?
