Granola Bars

I’ve been hearing from you and from my husband about how you are enjoying my blog.  I’m humbled, really.  My intention was never to bring attention to myself, but only to share my love of cooking, particularly baking.  I’m glad that you are getting a small glimpse into our lives, my life.

I’m not gonna lie…It’s been a rough couple of days.  There are just some times that I can actually feel the fingers of depression choking me, holding me down until I don’t want to breathe.  It’s really scary, actually.  This week has been one of those weeks.  It always seems to get the better of me when the kids have been sick, and the weather is bad and I can’t get out of the house and then everything seems so overwhelming.  There’s more laundry, more dishes, more meals, and on and on.  Then I begin to think, “What’s the point?” It’s all too much….so I just go back and lay down with Clark while he watches cartoons.  Sleeping and watching t.v. helps me forget about the present.  I’ve got a great husband, though.  He told me just get some sleep this morning and got the kids ready and off to school.  Then he called me around lunch and said, “I want to take you to get a taco.  Let’s get you out of the house.”  It’s just what I needed. He’s always what I need…. Even though it’s cold and rainy and dreary outside, the fresh air and the walk around Target did me some good.  I already feel better.  Not so overwhelmed.  The fingers are loosening their grip.

This pizza came out so pretty, I had to share a picture of it!  I made something a little different for me and Mike: Chicken and Tomato; the kids still had pepperoni and cheese, as always.  Since tonight is Pizza Night and I’ve already posted my pizza dough here, I’m going to share this recipe tonight.  My kids love granola bars, especially for their snacks at school.

Granola Bars

  • 1/3 c butter, softened
  • 1/3 c peanut butter
  • 1/2 c corn syrup
  • 2/3 c brown sugar
  • 1 tsp vanilla
  • 2 c rice krispie cereal
  • 2 1/2 c quick oats
  • 3/4 c flour
  • 1/4 c wheat germ
  • 1 c mini chocolate chips

Preheat oven to 350 degrees.  Grease a 9×13 pan.  In your mixing bowl, combine butter, peanut butter, corn syrup, and brown sugar and vanilla.  Next add cereal, oats, flour, wheat germ and chocolate chips – mixing well after each. Press dough firmly into your pan.  Bake for 10 minutes.  Remove from oven and carefully press down dough again (this makes sure that the bars are not crumbly).  Bake for another 10-15 minutes, or until golden brown.  Cool for at least 10 minutes before cutting.

Soooo yummy!  I think they’re even better the next day!

And this lil’ guy whom we call Dooser, because he’s always “doing” something, was taking a break from shoveling snow 😀  He’s been sick for the last 3 days and so he told me he needed to work!

Pizza Pizza

We love Pizza Night around here! Last week, PapaJohn’s cooked for me 😀 This week, I’m back to my old self and was ready for some homemade stuff. I doubled my dough recipe which made 2 large pizzas and a small pan of breadsticks.

Pizza Dough

2 pkgs yeast
2 Tbsp sugar
2 Tbsp olive oil
1 c very warm water
1 tsp garlic salt
1 tsp italian seasoning or pizza seasoning (optional)
1/2 c whole wheat flour
2 – 2 1/2 c all-purpose flour (or leave out ww flour and just use 3 c of all purpose flour)

Preheat oven to 450 degrees. Dump the wheat flour plus 1/2 c of regular flour into mixer. Add yeast, sugar, and warm water. Mix well for about 3 minutes, until yeast is completely dissolved and bubbles start to form. Add olive oil, garlic salt, and seasoning (if desired). Mix well. Add enough rest of flour to form a stiff dough. Knead in mixer for about 5 minutes or until dough looks smooth. Let rest for about 10-15 minutes while you prepare toppings. After letting dough rest, divide into 2 parts and stretch out on 2 greased pizza pans or don’t divide and put on 1 large half sheet baking pan. Top with pizza sauce and your favorite toppings. Bake for 12-15 minutes or until crust is golden brown and cheese is thoroughly melted.


Our toppings of choice tonight (nearly every week, actually): half cheese/half pepperoni

and thin crust Cheeseburger (for me and Mike)

We had a ton leftover….good thing the kids want sack lunches for school tomorrow!

It’s Pizza Night!!

Well, we’ve made it to the kid’s official favorite night of the week. They actually get up on Thursday mornings and announce that it’s Pizza Night. On the menu tonight: Cheese Pizza, Pepperoni Pizza, and Sausage/Bacon/Mushroom.
As a disclaimer, I want to point out that I deal with depression, and have for 4 years this month. It’s particularly difficult during this time of the year….when it’s so cold all the time, when the days are so dark, when the kids can’t go outside, when the hoopla of the holidays are over, etc. It’s because of the depression that I quit doing my last blog. However, it’s because of the depression that I’ve started this one. I need something to keep me busy, something to look forward to, an outlet, a hobby. This all brings me to the last couple of days. It’s been tough. Feelings of worthlessness, of doubt; struggling abnormally with my weight; being overly angry at the kids; wanting to just sleep all day; crying over stupid stuff. They usually just creep up on me.
So even though I LOVE TO BAKE (and I especially enjoy making homemade pizza), today was just not one of those normal days. So I’m glad I have a hubby who’s willing to do this for me:
