If you haven’t caught on to my theme this week, then let me spell it out:  Easy.  My Uncle Curt started calling me the Queen of Chill when I was in college because I wore my house slippers around…a lot.  😀 And after I started having babies, he saw how laid back I was with them.  For the most part, I’m a go with the flow kinda girl.  I don’t like a lot of fuss.  I like to be comfortable.  I like life to be as stress free as possible.  I don’t handle stress well.  My body doesn’t handle stress well.  And as I’ve gotten older, my mental state doesn’t handle stress well.  So whatever can make my life easier (and less stressful)…I’m all for it.  So I’m sharing with you some of my super easy recipes this week.  I’ve debated about even posting some of these because they are so simple.  However, simple is good.  And I’ve decided that they are still worth sharing.

Sooooo, these really do taste a lot like an Oreo…but a little crispier….and I dig the cream cheese filling 😀  And for what it’s worth, you can use any type of graham crackers and your own favorite flavor of frosting.  I remember my Granny making these for me with leftover homemade buttercream frosting…and she’d color it pink, just for me.  And when I have leftover buttercream frosting, I promptly make these babies for my kiddos.

Graham Cracker Cookies

  • 1 box of chocolate graham crackers
  • 1 container of cream cheese frosting

Break graham crackers along perforated lines.  Spread on desired amount of frosting on one cracker and top with another cracker.  Yummo!!

Fruit Salad is really one of the easiest things to throw together for dessert.  And the possibilities are endless!!  Take advantage of the fresh fruit that is in season as well as the canned varieties.

Fruit Salad

  • 1 can of no-sugar added fruit cocktail
  • 1 can diced or sliced peaches, light syrup
  • 4 apples, chopped
  • 2 pkg blackberries
  • 2 large handfuls of grapes
  • any other fruit you like (bananas, blueberries, strawberries, kiwi, etc)  (if I had all of these fruits, I would have added them!)

Dump the fruit cocktail and peaches, juice and all in a large bowl.  The juice helps the other fruit to not brown.  Wash and chop the rest of your fruit (what needs to be chopped, at least).  Stir and serve.  For a little extra special treat…dollop a bit of whipped cream on top!

Easy Chimichangas

Do you still have some Crossroads Burritos lurking in your freezer?  Or maybe you’re just looking for a fresh idea on an familiar recipe….  Give these a try!

Easy Chimichangas

  • CCC Burritos or other store bought burritos or homemade burritos
  • oil for frying
  • favorite toppings (lettuce, shredded cheese, salsa, fresh cilantro, etc.)

Pour oil into frying pan or cast iron skillet until about 1 inch deep.  Heat to medium-high.  Microwave burritos until no longer frozen, but not necessarily all the way hot.  Fry each burrito for about 1 minute on each side or until golden brown.  Remove from hot oil and let drain on paper towels.  Serve with favorite toppings.
