Deviled Eggs

Here’s one of Mike’s favorites ūüėÄ ¬†I don’t make them too often because they’re a bit time consuming. ¬†But I always feel bad for him when there’s a church potluck….he waits to be last in the line and the deviled eggs are always gone by the time he goes through the line….poor guy!! lol

Since I love him so…..I made these for him today….just because ūüėÄ

Deviled Eggs

  • 1 dozen eggs
  • 1/3 c Miracle Whip
  • 1 tsp mustard
  • 1 tsp house seasoning
  • 1 Tbsp sweet pickle relish

Place eggs in large sauce pan.  Cover with water.  Bring to a boil.  Turn off heat, cover eggs with lid and let them sit for 18 minutes.  Drain off water.  Peel eggs and cut in half, length-wise.  Remove cooked yolks and place in medium bowl.  Add Miracle Whip, mustard, pickle relish, and house seasoning to yolks.  Mix well.  Spoon mixture back into cooked egg whites (I piped mine using a pastry bag & pastry tip).

My friends, Kris and Cindy, swear by baked oatmeal…so I decided to give it a go. ¬†And here’s the recipe I ended up using.

Cinnamon Baked Oatmeal

  • 1/2 c applesauce or vegetable oil
  • 1/2 c brown sugar
  • 1 c milk
  • 2 eggs
  • 1 Tbsp baking powder
  • 3 c quick oats
  • 1/2 c cinnamon chips
  • 2 Tbsp cinnamon-sugar

Preheat oven to 350 degrees. ¬†Lightly grease an 8×8 square pan. ¬†In mixing bowl, combine all ingredients except cinnamon-sugar. ¬†Top with cinnamon-sugar. ¬†Bake for 30-35 minutes or until toothpick comes out clean.

However, my verdict is….it was pretty good, but not great. ¬†It was best when it was warm…with butter on top (but what isn’t good with butter?…..) ¬†I think using the smaller pan made it too thick. ¬†I guess I should’ve waited for Kris’s recipe ūüėÄ ¬†I’ll link you to her recipe as soon as she posts it….
