Spring Break Day 3

Day 3: We spent the day with Aunt Meme!

I helped her with some pictures for Glencoe Church of Christ’s 100th Birthday Celebration that will be this May.

The kids played with toys and had pudding and cookies and all kinds of fun (and apparently got a hold of my camera and took pics of themselves “fake-sleeping”).

I couldn’t get a pic of Rae b/c she was in one of her funky moods.

But it was still a fun day at Aunt Meme’s!

Spring Break Day 2

Day 2. It’s been a long fun day.

This morning my momma, my lil’ sis – Beth, Rae, and I headed into Stillwater for a bit of shopping. I will state right now that neither I nor my mom like to “shop”. We just like to go in and get what’s on the list and go. Beth and Reagan, however, like to shop. I do admit that helping Rae with trying on clothes is much more fun than me trying on clothes. She’s so small and petite and everything looks cute on her. I just never enjoyed it. Nothing ever fit right. It’s not very fun when you just see bulges :(. BUT it was super fun with Reagan today!!!! We found a great Easter dress!!

And if you are wondering about who Beth is….I’ll explain it better in another post when I’m not typing on my iPhone. I will say that she is my foster sister that lived with my parents for 13 years before having to go back to live with her biological dad (actually both her & one of her biological brothers, Cory, lived with my parents.) But I’ll leave it at that for now. I love her. And even though she is now 16, I still think of her as the little 16 month old curly headed baby girl that just changed our lives forever ūüėÄ

Spring Break Day 1

So we made it to Nana’s!! They got a lot more snow down here but it was already starting to melt when we got here. However the sun is shining and the kids were dying to play outside.

Mt philosophy: it’s Spring Break! Just have fun!

So I let the kids play outside. It’s 60 some degrees. And yes, that is snow in the background!

Salisbury Steak

Well, dear friends….the kids and I are getting the heck out of Dodge tomorrow after church and going to spend some time in Oklahoma ¬†ūüėÄ ¬†The kids have Spring Break this next week and what better way to spend the Break than with Nana! ¬†Yippeeeeeee! ¬†I will try to post while I’m gone…however, they don’t have internet, so they will be made from my phone and the pictures will not be of the caliber that I’m used to (b/c The Camera is Mike’s baby and it will be staying home with daddy). ¬†I’m really looking forward to a few days away. ¬†With that, I’m leaving with this recipe. ¬†I honestly don’t think I’ve ever made this before (I’ve eaten it, just not made it myself), but it was ohhhhhhhhh soooooooo yummy!

Salisbury Steak

  • 1 can french onion soup
  • 2 lbs lean ground beef
  • 2/3 c bread crumbs
  • 1 egg
  • 1/2 tsp House Seasoning
  • 1 tsp garlic powder
  • 1/4 c water
  • 1/2 jar of beef gravy
  • 1 Tbsp flour
  • 1/2 Tbsp Worcestershire sauce

Preheat oven to 325 degrees. ¬†In large bowl, mix together ground beef with 1/3 c of french onion soup. ¬†Reserve rest of soup for later. ¬† Add bread crumbs, egg, House Seasoning and garlic powder. ¬†Mix well and form into patties. ¬†In a hot skillet, brown the patties but do not cook all the way through. ¬†Drain if necessary. ¬†Place patties in 9×13 pan. ¬†In a small bowl, mix together reserved french onion soup and flour until smooth. ¬†Add in water, gravy and Worcestershire sauce. ¬†Pour over patties and bake in oven for 30 minutes.

We had ours with Garlic Mashed Potatoes. mmmmmm

I love doing baking projects for our church. ¬†One of them is making chocolate chip cookies for our First Time visitors. ¬†It’s a project that was started up by someone else but our secretary, Maxine, gives me a call when they’re getting low on cookies. ¬†I love it! ¬†This is my favorite “go-to” recipe for basic chocolate chip cookies.

Chocolate Chip Cookies

  • 1/2 c butter
  • 1/2 c butter flavored shortening
  • 3/4 c sugar
  • 3/4 c brown sugar
  • 1 3.5oz pkg instant vanilla pudding mix
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 1/4 c flour
  • 1 c chocolate chips

Preheat oven to 375 degrees. ¬†Cream together butter, shortening, sugar, brown sugar, and pudding mix. ¬†Add eggs and vanilla and mix well. ¬†Add salt, baking soda and flour. ¬†Mix well again. ¬†Stir in chocolate chips. ¬†Drop by tablespoonfuls and bake for 8-10 minutes. ¬†**If you’d like a variation to your cookie, use a different kind of pudding mix! ¬†I’ve used butterscotch and chocolate with great results. ¬†And be creative with your add-ins!**

Did you know that today is National Oatmeal Cookie Day?!! ¬†I didn’t….until this afternoon and HELLO?! ¬†I had to make some Oatmeal Cookies!!!!
