Oh Henry Bars

As I said yesterday….I love Tuesdays ūüėÄ ¬†Mike and I usually tag team: ¬†I get them ready for school and he takes them to school. ¬†But we also like to¬†take turns giving each other a day of the week to “sleep-in”. ¬†This just means that only one of us has to get up and get the kids ready for school and take them to school. ¬†I like my sleep-in days to be Tuesday. ¬†Today Clarky and I slept till 9am. ¬†Then we had some tickle time. ¬†Then while still in bed, he watched some cartoons and I checked all my emails and blogs. ¬†We moved on to some breakfast (he loves eggs in a basket…egg in the middle of bread) and then he got busy at playing hard and making a big mess of toys in the living room and I got busy getting some laundry done and making a big mess of folded laundry in the living room (while watching my fav show: McLeod’s Daughters).

Cader had soccer practice this evening, so tonight was a perfect night for Sloppy Joes. ¬†I was also able to throw some Oh Henry Bars together before practice. ¬†I still have never figured out why they are called Oh Henry Bars, but who cares?! ¬†They are quick to make and yummy. ¬†It just doesn’t get much better than oats and chocolate and peanut butter….mmmm. (and a cup of butter and lots of sugar isn’t bad either)

Oh Henry Bars

  • 1 c butter
  • 1 c brown sugar
  • 1/2 c sugar
  • 4 c quick oats
  • 1 c chocolate chips
  • 1 c peanut butter

Preheat oven to 350 degrees. ¬†Cream together butter, brown sugars, sugar, and oats. ¬†Spread in 10×15 jelly roll baking sheet. ¬†Bake for exactly 12 minutes.

Melt chocolate chips and peanut butter in microwave.  Remove bars from oven and let cool for about 5-10 minutes.  Spread melted chocolate mixture on top of warm bars.
