I’m spoiled

Mike came home this afternoon for a bit of lunch and handed this to me:


And why did he get it for me, you ask?  No reason.  Just ‘cuz he loves me.

Now go read more about Ree if you haven’t already!  She’s way funny and takes great pictures and is very interesting!  And she lives in Oklahoma.  About an hour and half away from my parents!  Small world!

I can’t make these yummy Scotcheroos without thinking of my sister, Katrina.  She’s a girl who’s not afraid to thoroughly enjoy her food, especially chocolate.

Yeah, she started young.

She still likes to “play” in chocolate.  She actually went to school to get her degree in culinary arts 😀

These were her cakes she did for my grandparents’ 50th Anniversary a few years ago:

And I can’t imagine lil’ Natalie Karen not enjoying chocolate…once she get’s here…in July 😀
Katrina and I were not always on the same page growing up.  She’s five years younger than me and I often felt way out of my league with her.  She’s amazingly beautiful (even did some modeling in Jr. High)….very athletic…super creative….great with people.  I just always new I couldn’t compare to her.  And so I distanced myself.  However, I was the one who lost out on all those years….b/c she’s beautiful on the inside too…and super creative….and great with people!  Now, I certainly wish we were closer in miles, but our hubby’s jobs don’t allow that…for now 😀
So, Katrina, I know I didn’t say it as often as I should have, but I do love you, deeply.  You’re a wonderful sister.
And I wish I had been a better big sister.
Back to the Scotcheroos….

You just can’t eat these without getting a little messy.  Even today as the kids and I were snacking on them, Reagan kept saying, “These are messy but sooo yummy!”


  • 1 c sugar
  • 1 c corn syrup
  • 1 1/2 c peanut butter
  • 6 c rice krispie cereal
  • 1 c chocolate chips
  • 1 c butterscotch chips

In a large sauce pan, heat sugar and corn syrup over medium high heat just until it starts to boil.  Remove from heat and stir in peanut butter.  Mix well.  Add rice krispie cereal and stir until all cereal is well coated.  Pour into greased 9×13 pan.  Heat chocolate chips and butterscotch chips in microwave, at 15-20 second intervals, until all melted.  Do not overheat!!  Mix well and spread over the top of the bars.

Crockpot Cream Cheese Chicken

Since I still haven’t been feeling that great, this was a great supper….especially since my family loves this dish!

Crockpot Cream Cheese Chicken

  • 4 large chicken breasts
  • 1 10.5oz can cream of mushroom soup
  • 1 c chicken broth
  • 1 pkg Good Seasons Italian dressing mix
  • 1/2 tsp garlic powder
  • 1 8oz pkg cream cheese
  • hot cooked noodles

Pour the soup, broth and dressing mix into your crockpot.  Stir well and place chicken breast on top.  Cook on high for 4 hours (or low for 6 hours).  During the last 30 minutes, shred the chicken with 2 forks and add the cream cheese.  Cook for another 30 minutes.  Stir well and serve over hot cooked noodles.

(I used egg noodles tonight, but I’ve used fettucine and spiral pasta before, too).  I also served it with French Bread.  Unfortunately, I wasn’t able to eat any of this yummy pasta.  I had more Egg Drop Soup and some of the bread.

Egg Drop Soup

Since the Mashed Potato Soup didn’t go down to great, I thought I’d give this soup a go today.  It was much more soothing on the sore throat!

Egg Drop Soup

  • 4 c chicken broth
  • 2 eggs, beaten
  • salt & pepper, to taste
  • 2 green onions, chopped (for garnish)

Bring broth to a boil.  Slowly drizzle in beaten eggs.  Add salt & pepper to taste and top with green onions.

This was perfect!  As you can see in the picture, I didn’t add the green onions.  1.  I didn’t have any.  2.  I wouldn’t have felt like adding them anyways.

Please bare with me as I’m getting used to my “new” lens on my “new” camera.  Mike got a new camera and I got the old one and the old lens.  😀

Mashed Potato Soup

Sorry….I fell off the blogging world for a few days.  I’ve been feeling pretty yucky.  I’ve been fighting a terrible sore throat since last Friday.  I made this soup last night, seeing as how nothing else felt good against my painful throat.  Except these:

Yeah…it’s been my main food source since Friday….ugh.

Mashed Potato Soup

  • 2 c leftover Garlic Mashed Potatoes
  • 3 c milk (or according to your desired consistency)
  • 1 c cooked meat (fried bacon, chopped ham, hambuger, etc.)
  • 4 slices American cheese
  • House Seasoning, to taste

Bring milk and potatoes to boiling, stirring to make sure potatoes don’t stick to bottom.  Add cheese and meat. Season with House Seasoning or salt & pepper, to taste.

Even though this was very yummy, it was still not very soothing.  So I tried Egg Drop Soup today.
