Gooey Cinnamon Rolls

Gooey Cinnamon Rolls

  • 1 c milk
  • 1/4 c water
  • 1/4 c (1/2 stick) butter
  • 1 Tbsp yeast
  • 1 Tbsp sugar
  • 1 pkg instant vanilla pudding mix
  • 1 egg
  • 1/2 tsp salt
  • 3-4 c flour

Cinnamon Schmear

  • 1 c butter, softened but not melted
  • 2 c brown sugar
  • 1 Tbsp cinnamon

Cream Cheese Frosting

  • 1 8oz pkg cream cheese
  • 2-3 c powdered sugar
  • 1-2 Tbsp milk

Dough: Add 1 cup of flour, yeast, and sugar to mixing bowl.  Warm milk, water and 1/4 c butter in microwave for about 1 minute or until warm to wrist.  Add this to flour mixture and mix for about 2-3 minutes.  Add egg, pudding mix, and salt.  Add flour 1/2 c at time until soft dough forms.  Knead in mixer for at least 5 minutes.  Let rise for about 1 hour or until dough doubles.

Make schmear: In a medium bowl, combine 1 c butter, brown sugar, and cinnamon.

Preheat oven to 400 degrees.  Roll out risen dough on floured surface.  Spread schmear over surface (can be tricky, but it doesn’t have to look perfect!).  Roll up length-wise and seal edges.  Slice rolled dough with a sharp knife, or I actually prefer to use string or dental floss.  (Ask me about this sometime, if you’ve never seen this done.)  Place slices (I get 16 large rolls) on greased pan.  Bake for 10-12 minutes, or until golden brown.  Spread with cream cheese frosting.  If you want the frosting to stay thick, wait until rolls are completely cooled.  I like my frosting to drip down into the rolls though 😀

Frosting: Combine cream cheese, powdered sugar, and milk in mixer and whip until nice and fluffy.
